Ingredients
Serves 4 people (430kcals per portion)
- 500g 5% lean beef mince
- 100g tinned haricot beans or kidney beans
- sunflower oil spray
- 2 tbsp/30ml of tomato purée
- 400g tinned chopped tomatoes
- 1 tsp sugar
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp chilli powder
- 2 garlic cloves diced
- 1 onion diced
- 125g of rice of choice (I used microwave Mexican rice)
- Beef stock pot
- 300ml water
Instructions
- Spray large frying pan with generous amount of oil (I use 20 sprays)
- After a minute or so add onions
- Dry until softened then add garlic and spices (paprika, cumin and chilli)
- Stir and heat for another few minutes
- Turn the heat up and then add the beef
- Break the meat up as it cooks and cook until brown
- add stock pot to 300ml hot water and stir until dissolved
- Add pour stock over the meat
- Add 2 tbsp tomato purée, tinned tomatoes and sugar then stir
- simmer for 15-20mins
- Add beans and a pinch of salt and pepper and heat for a further 10 mins
- at this point I heat my rice and split the chilli into portions
- Serve and enjoy 😊
