Chilli and rice

Ingredients

Serves 4 people (430kcals per portion)

  • 500g 5% lean beef mince
  • 100g tinned haricot beans or kidney beans
  • sunflower oil spray
  • 2 tbsp/30ml of tomato purée
  • 400g tinned chopped tomatoes
  • 1 tsp sugar
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chilli powder
  • 2 garlic cloves diced
  • 1 onion diced
  • 125g of rice of choice (I used microwave Mexican rice)
  • Beef stock pot
  • 300ml water
Instructions
  1. Spray large frying pan with generous amount of oil (I use 20 sprays)
  2. After a minute or so add onions
  3. Dry until softened then add garlic and spices (paprika, cumin and chilli)
  4. Stir and heat for another few minutes
  5. Turn the heat up and then add the beef
  6. Break the meat up as it cooks and cook until brown
  7. add stock pot to 300ml hot water and stir until dissolved
  8. Add pour stock over the meat
  9. Add 2 tbsp tomato purée, tinned tomatoes and sugar then stir
  10. simmer for 15-20mins
  11. Add beans and a pinch of salt and pepper and heat for a further 10 mins
  12. at this point I heat my rice and split the chilli into portions
  13. Serve and enjoy 😊
